Pumpkin Pie  
Pumpkin Pie - wondering what to do with the pulp from your Halloween Pumpkin making?

Serves 6 - 8


Pie Crust
* 250g plain flour
* 125g polyunsaturated margarine such as Diet Flora or St Ivel Gold
* 2 tablespoon Splenda

* 500g pumpkin flesh minus the seeds
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground mixed spice
* 1/2 teaspoon ground ginger
* 100g brown sugar
* 3 eggs
* 150g single cream

Preheat oven to 190ºC / 375ºF / Gas Mark 5

To make the pastry

Sift the flour into a bowl and stir in Splenda. Rub in the margarine until the mixture resembles fine breadcrumbs.

Add enough cold water to form the mixture into a dough. Wrap in cling film and chill for 30 minutes

Remove from the fridge and on a lightly floured surface roll the pastry out thinly using a rolling pin. Then line a 9 inch shallow, loose-bottomed flan tin with the pastry and chill until ready to use.

To make the filling

Peel and dice the pumpkin flesh into 2cm chunks. Put into a saucepan and steam for 10 minutes until tender.

Transfer to a bowl and using a potato masher, mash the pumpkin until smooth. Then add the cinnamon, mixed spice, ginger and sugar and combine.

Whisk the 3 eggs and add to the pumpkin mix.

Remove the pie crust from the fridge and pour the pumpkin mix into the base.

Cook for 45 - 50 minutes until set, firm to the touch and a knife poked in the middle of the pumpkin mix comes out clean.

Chris is addicted to anything cinnamon lol! It is definatley one of the best smells and tastes in the world!
